This recipe I saw while I was preparing masterchef Australia ...

Short pastry with almond flour, unsalted peanuts , salted caramel , chocolate ganache ... how can you resist the temptation ? ?


Tarts with salted caramel and peanuts

Ingredients for the base:


180 g butter at room temperature

100 g of sugar

A pinch of salt

2 eggs

40 g of almond flour

320 g flour 00



We combine fast the various ingredients in a bowl ( or mix) pour the mixture on a pastry board and work with your hands until you form a smooth paste . We crush the dough will be rather in plastic wrap and let it chill for at least an hour.

After this time Roll out the dough and put it into the molds in the shape of little tart . We place the molds in the fridge for at least 30 minutes making sure to lightly pierce the base with a fork.

Meanwhile, bring the oven temperature to 180 degrees.

Bake the stage for about 12 minutes or until it become golden brown .

Let cool stencils and then detach the basics.


Ingredients for the caramel:


120 g of sugar

45 g glucose

100 cream

20 butter

5 g of salt




Pour the sugar and glucose in a saucepan and let it caramelize . Meanwhile, we heat the cream. When the sugar has taken on the classic caramel color add slowly (be careful because you will develop heat) cream, salt and butter and work the ingredients well with a whisk. Pour it into a bowl and let cool .


Ingredients for the ganache :



160 cream

100 dark chocolate

50 g milk chocolate

28 g butter at room temperature




Tritiamo all the chocolate finely. We heat the cream and chocolate versiamola on , turn quickly and add the butter and continue to mix until you get a smooth cream . Let it cool.



Assembling the cake


We prepare all the bases obtained on a plane. We put in a pastry bag and caramel versiamone a background on all the basics. Let's add some peanuts cut in half and we cover it all with the ganache prepared earlier . We decorate the tart with caramelized peanuts and sugar decorations .
