I must confess that the first time that I found myself with a big octopus to cook the salad I had confused ideas then I turned to Mariarca friend who sells fish . His advice more careful study have given rise to this recipe from the surprising result .

 

Octopus salad

Ingredients:

 

A nice octopus also defrosted

Two bay leaves

Two cloves

a carrot

Two stalks of celery

Sale

A clove of garlic

Oil extr . olive

Pepe

parsley

lemon

 

Procedure:

 

In a large pot of cold water we put the carrots, celery, garlic , bay leaves and bring to a boil.

Meanwhile, wash and clean it well octopus. As soon as the water begins to boil, take the octopus by the head and immergiamolo water completely by pulling it out soon after. We repeat the immersion for three times, then let cook the octopus , taking care not to lose the boiling water. The cooking time will obviously depend on the size of the polyp . After about 45 minutes check if it is cooked by checking the tenderness of the meat. The important thing is to let it cool in its cooking water without removing it .

Once cold we cut it into pieces and clean if necessary in the same cooking water.

We can do is dress it by an emulsion of olive oil and lemon maintaining a ratio of 4 to 1 ( 4 tablespoons of olive oil - lemon 1 ) .

We can add parsley, pepper , salt.

I like to also add celery and walnuts or almonds or soy, you can have fun in this .
